Fight Night: Round Two, Super Punch Out was playable right from the beginning.

Soul Calibur II; Link obviously

MK Deception; Shao Kahn and Goro

Splinter Cell; GBA link allowed you to use the GBA as radar/map, ala Metal Gear Solid.

I was curious to know which games you all thought had the most replay value.
