So I can't seem to sign into Xbox Live right now. Since almost every 360 game requires a profile to play, and most profiles are online enabled, I basically can't play anything now.
Sometimes I miss the old days. Didn't need internet access to enjoy a game

I seem to have trouble getting my profile to run offline ever since the day I turned it into my Gamertag and got an Xbox Live Silver account for it. Seems like Xbox Live is letting me sign in again now though, so it's cool. I can play some more Castle Crashers. Sometimes I really find the whole profile/Gamertag thing annoying though. Like how all your saves are tied to it, so you can't even load up your data unless you're signed in

I play all games offline, no need to sign in at all. Never needed unless for update or backward compatibility for original xbox games

If you're talking about full retail games, they are all playable without an internet connection. You will still have a gamertag on your hard drive to save games.
The last time I heard, only 60-65 percent of Xbox 360 owners have their console connected to the internet.
If we're talking about XBLA games, it is slightly different. If it's not the original console that you downloaded the games from, or you haven't used the migration tool, or you also haven't had Microsoft transfer the licences, then your XBLA games will be unplayable in their full version when offline.
They have corrected this problem with the migration tool, and now you can move the licences yourself.
All games (retail and XBLA) are playable offline, by any user on your console.

Hmmm, guess I'm doing something wrong. Basically, when I try and play something it tells me to sign into my profile, which automatically puts me online. I usually get a message like, "Can't save your progress unless you sign into your profile"
Maybe I'm doing something wrong or just being stupid

I just tried turning off my modem and turning on my 360. The dashboard came up, and my gamertag signed in automatically (as I have set it to do that), but it didn't connect to Xbox Live...obviously since my internet connection was off.
So, I tried playing Castle Crashers (what else?) and it worked normally. Any achievements I got would be saved on my gamertag on my hard drive. Those wouldn't show up anywhere else (like on Xbox.com or a friend's list) since the information never went out past my console.
