Does anyone know how to change a battery in a genesis cart?
Is it easy?
Do I need to be able to soder?
I have the chance to buy a copy of Shining Force 2 but it does not save... should I buy it or spend a little extra for one that does save?

Yes, though you can use less permanent methods such as tape
If there isn't that much of a price difference get the saving one, if there is, get the other, the one that saves will probably die on you in a couple years anyways.

Yeah, a lot of my older cart's batteries are dying now. Link to the Past just died
I'd say changing the battery is easy as pie. You have to buy a security bit (easily found on eBay, $5). I have two sizes, of which I can open almost every old school game cart or console. Worth getting.
A soldering iron can be bought at Radio Shack for pretty cheap, about $20 I think for a decent one. All you really have to do is hold the tip of the iron to the solder joint (which is gonna be pretty small) until it turns to liquid then pop that battery out. Put the new one in, cut a small piece of solder off (like the size of a BB) and heat it until it turns to liquid and you're done.
You're actually not suppose to ever touch the iron to solder directly. You're suppose to heat up the contact, then touch solder to it until it melts on. But in this case, I wouldn't want to heat up the battery
Or just use tape like plenty of people suggest. I guess tape is fine if you're careful with the cart, not to drop it or anything. But while you're going through the trouble, the carts open, you already used the solder iron to get the old battery out, you might as well solder the new one.
