Older. Not wiser.
I quite liked the flame one - the rising lava sections were cool, and I was pleasantly surprised when I decided to "attack" the volcano pellets that often rained down, and it worked (not only that but I actually got 2 extra lives in 2 hits on those pellets! Neat).
Regarding the music level - Amiga platformers seemed to frequently feature a music level, for whatever reason (I guess it was because the Amiga used to be a music powerhouse, and the game creators somehow felt they should do homage to this?).

I no im late to the game but so far its the water world cause of its kick ass music. I have yet to beat the mole he takes way to many hits!

I don't think Sonic Team made Ristar. Just the one guy who did character design.

My favourite Ristar levels are thus, in descending order:
1. The music level. It's a bit cheesy, I know, but I just think it's great. Instruments were used very imaginatively for the level-design, and the metronome sections require some thinking and skill to get round.
2. The snow/ice level. There's something I find really satisfying about sliding on the ice and having to jump at the right moment to get to the next platform. The snowball sub-boss is fun, too.
3. The water level. Ristar's Ecco-like swimming is fun, and I don't know if it's just me, but this level seems quite calming! Great music, too.
4. The forest level. It's nice and easy, but what do you expect from the first level? It's rich and beautiful to look at, and it feels good to whizz through.
5. The industrial level. As mentioned by someone else, it looks and feels the part, but I just don't enjoy playing through it as much as the other levels. There are some nice touches like the changing pipes and anti-gravity. The boss is annoying.
6. The fire level. I like the music in this one, but it's always made me feel a bit uneasy. The cages, rising lava, memory games - a great challenge, but it just annoys me a little, especially the falling fireballs!
