To get the ball rolling, here's some entries to jog the mind:

Henry Hatsworth in the Puzzling Adventure, Monster Tale and Giana Sisters DS are my favorites on this list. Henry Hatsworth is one of my favorite games, definitely in my top 10 for sure.

I have N+ for Nintendo DS. This is the platformer genre boiled down to its purest core elements. If you love platformer mechanics, you will love N+ (or at least I think you should); Conversely, if you hate platformers, there is absolutely nothing here for you. The graphics are...pretty lackluster to say the least. The main character is little more than a stick figure. The real draw here is the well-balanced challenge curve. N+ follows the school of thought that there should be no tutorial level; rather, the player should learn to play the game organically. Play N+ if you absolutely love the mechanics of the platformer genre.

Ones I've beaten:

Aliens Infestation
Casltevania: Dawn of Sorrow
Castlevania: Order of Ecclesia
Castlevania: Portrait of Ruin
Contra 4
DK Jungle Climber
Henry Hatsworth and the Puzzling Adventure
Kirby: Canvas Curse
Kirby: Mass Attack
Kirby: Squeak Squad
Mario Vs. Donkey Kong 2: March of the Minis
Monster's Tale
Metal Slug 7
New Super Mario Bros.
Super Mario 64 DS
Wario: Master of Disguise
Yoshi's Island DS

I will comment now on ones what I feel like doin'

Casltevanias: All fucking fantastic. Order of Ecclesia is probably my favorite, but the other two are damn close.
Contra 4: Hard as fuck, but sooooo fun. If you're willing to die a lot, this is a fantastic throwback (and the challenge mode is super fun and tough too).
Henry Hatsworth: An immensely fun platformer, which I was very sad when it ended (especially because it so clearly seems like it was originally meant to be far longer :/)
Kirbys: All very fun. I haven't played the Wii U Kirby game, but I fucking loved Canvas Curse way back when. Mass Attack is also fantastically unique, and probably my favorite Kirby spin-off game. Squeak Squad is just more Kirby, and ain't nothin' wrong with that!
Monster's Tale: Not a very good game. The gameplay isn't too bad, but the developers really just had no idea how to do recursive game design properly. Not terrible, but definitely shows its rough areas.
Metal Slug 7: Not quite Contra 4 in terms of how much time I've put into it, but it's still pretty fun.
Wario: Master of Disguise: A game I guess I'm in the minority on, but I really enjoy it! I love Wario Land, and though this isn't by the same people, this game definitely fills a similar itch. I get why people don't like the costume-drawing stuff, but I'm fine with it.
Yoshi's Island DS: An apparently unpopular opinion as well, but I like this game. I also don't remember it being that hard, but it has been a while. I think it deserves another playthrough soon :)

So here's my experiences...

What I've beat:

Aliens: Infestation (7/10 | Decent metroidvania, a little repetitive, but pleasantly hardcore.)
Castlevania: Dawn of Sorrow (9/10 | First game I got for DS, excellent aside from force touchscreen stuff.)
Castlevania: Order of Ecclesia (10/10 | Masterpiece, best in its class. Love it to bits.)
Castlevania: Portrait of Ruin (7/10 | Decent, but too much recycled content was a letdown.)
Contra 4 (8/10 | Excellent production values, very hardcore, perhaps a little too hardcore.)
Kirby: Canvas Curse (8/10 | Lovely innovation but creative juices start to run out too soon.)
Mega Man Zero Collection (9/10 | Beat these on GBA, great games with plenty of challenge.)
Mega Man ZX (8/10 | Great metroidvania styled Mega Man, but its built-in map SUCKS.)
Mega Man ZX Advent (7/10 | They fixed the map, but later stages are too spikey for their own good.)
Monster Tale (7/10 | Great combat and platforming, but wayyy too much backtracking.)
New Super Mario Bros. (8/10 | Fun stuff, too bad Nintendo ran this concept into the ground later.)
Scurge: Hive (6/10 | Decent isometric Metroid-ripoff, aggravating game design sucks a lot of fun out though.)
Simple DS Series Vol.18 - The Soukou Kihei Gun Ground (7/10 | Fun mecha shootin' and jumpin'.)
Sonic Colors (8/10 | Perhaps the best portable Sonic ever made, but doesn't match the Wii version.)
Super Mario 64 DS (7/10 | Loved this on N64, but Nintendo botched the controls here big time.)
Umihara Kawase Shun Second Edition Kanzenban (9/10 | Very fun swing-based-platforming about a girl and her fish problems.)
Yoshi's Island DS (4/10 | Poor sequel to a masterpiece, hard to the point of not being fun.)

What I've played but didn't finish:

Giana Sisters DS (Decent platforming, but becomes extremely repetitive too quickly.)
Super Princess Peach (Charming in its own misogynistic way, too many required collectables for my tastes though.)
The Legendary Starfy (Very nice graphics and music, but so cake easy it bored me to sleep.)

Even not liking handhelds doesn't stop me from enjoying some amazing 2D Castlevania. That said, I think Aria of Sorrow is a lot better than Dawn. And Portrait of Ruin is a little average... maybe better than Harmony of Dissonance.

But Order of Ecclesia is a masterpiece. They ditched the stylus gimmicks and cranked the difficulty back up to classic Castlevania toughness (I think all the Metroidvania games are pretty easy, with Order and Circle of the Moon being an exception. But the traditional games can be crazy hard and awesome). I would say Order is easily up there with my Metroidvania favorites: SoTN, Aria, Circle, and Order. No idea how I would order them.

Only played these three once each though! I should replay them someday.

What I've beaten:

Astro Boy: The Video Game
Batman: The Brave & The Bold
Castlevania: Dawn of Sorrow***
Castlevania: Order of Ecclesia***
Castlevania: Portrait of Ruin***
Contra 4
Giana Sisters DS
Kirby SuperStar Ultra
Kirby: Canvas Curse
Kirby: Squeak Squad
Mega Man Zero Collection (only MMZ1/2)
Monster Tale
New Super Mario Bros.
Super Mario 64 DS
Super Princess Peach
The Legendary Starfy
Scurge: Hive (on GBA)

What I've played:

Aliens: Infestation
Bangai-O Spirits
Commando: Steel Disaster
Donkey Kong: Jungle Climber
Drawn to Life
Exit DS
Henry Hatsworth in the Puzzling Adventure
Impossible Mission
Kirby: Mass Attack
Max & the Magic Marker
Mega Man ZX
Mega Man ZX Advent
Metal Slug 7
N+
Prince of Persia - The Fallen King
Sonic Rush
Spider-Man: Web of Shadows
Steal Princess
The Legend of Kage 2
Wario: Master of Disguise
Yoshi's Island DS

I'll talk more later about most of these when I get a chance. If the game got beaten, I probably enjoyed it enough, although it's no guarantee I liked it better than something I just played.

My absolute favorites in that have to be the Castlevania games. I think the best of those are Dawn and Ecclesia, but Portrait was pretty good, despite some serious asset reuse. (Oh, and Johnathan! Charlotte! Johnathan! Charlotte!)

Contra IV is the bomb. Hard as nails, but it plays more like a cross between Contra III and the original Contra, which means there's a lot more stage and platforming than other, later Contra games.

Astro Boy was addictive, peak Treasure-level stuff. I loved the exploration, some of the insane combat, it's just a great game all around. NOPE

Super Princess Peach was surprisingly good, and a game I wish I'd bought legit. You can tell it's TOSE, who also does the Starfy games, but this one felt a little more thought out, with some more interesting level design, despite the overall lack of challenge.

I've recommended Scurge: Hive before. Only the ridiculous boss battle at the end keeps it from being an absolute instant classic in my mind. I might be a little more irrational about it than some, but it really struck the right chords with me.

New Super Mario Bros., despite being the game that sort of rebooted 2D Mario, still holds a special place in my heart. Remember, the idea of returning Mario (or a lot of other games, honestly!) to his 2D roots was an idea that folks weren't sure was going to work! I love how the game is content to be rather simple, a sort of SMB1 take on the genre.

The two platformer Kirby games are excellent, of course. I'm a sucker for them. Always have been, ever since Adventure on NES. Super Star is still amazing in DS form, and Squeak Squad, while at times feeling a little more perfunctory, can be legitimately challenging if you're aiming to snag the treasures in time. There's an urgency there that's not often in Kirby games, and if you're in the mood for that (not always the case when I'm playing Kirby, though!), then it's pretty cool.

Canvas Curse isn't necessarily a platformer in the traditional sense, but it is fantastic. I think it's better than Rainbow on Wii U.

Monster Tale is a really nice Metroid-style game that suffers from a little too much pointless backtracking. In Metroid, backtracking usually nets you all sorts of interesting things along the way, and also lets you uncover shortcuts to areas to shorten up said backtracking. You don't get a whole lot of that with this one, but it's still solid stuff. Same dev as Henry Hatsworth.

I think I'll talk about a few more later. :P

Knowing how much you love Kirby, I'm surprised you haven't beaten Kirby: Mass Attack.

Seeing Sarge talk about them, I remembered that I'd beaten:

Mega Man Zero Collection: Pretty damn tough, but really fun. The Z-saber just totally makes that series for me. 3 Is probably my favorite. Really loved the plot in that one.

Hive: The Scurge : Really hard to recommend, to be honest. One, because the controls aren't quiiite tight enough for it to be a really great action game (maybe the GBA port is better on this front though). Two, the controls are such that you're mashing the D-pad so much that it's the only DS game to hurt my thumb to play after a while (and I've played me a LOT of DS games). Three, the final boss is total fucking bullshit and the opposite of fun.

I will also mention that I have played both Super Princess Peach and The Legendary Starfy, although have not beaten either, as they're just both so easy that I found it fairly difficult to stick with it.

Agreed.

But my biggest beef with Scurge: Hive is how your health is constantly draining if you're not in a safe spot. The developers took one of the worst ideas from Metroid Prime 2 and stretched it across their entire game.
