I have several modded systems. All done by someone else. I have a Wii and an Xbox 360 that I had modchipped while living in Asia sometime around 2009. I also have Saturn I must've had done in 1997 or so. And then another Saturn I bought pre-chipped from Segastyle.
How would I go about figuring out what chips are installed? Mostly interested in the Wii and Xbox 360. I'm guessing I'll have to open them up? Kind of scary task for me. I have assembled PC's before, is it any different? Appreciate any advice.

Yeah, you'll have to open them up. For the Saturn, it's not a hard task at all. For the Wii and 360, it wont be as easy.
For the Saturn, on the bottom there's just 6 #2 phillipshead screws. Take them out, then flip it over (carefully, hold both halves together so they don't come apart when you're flipping it over) and then lift the top off. You'll be able to see the mod chip without having to disassemble anything inside.
For the Wii it's a little more complicated. The Wii has several different types of screws. Some triwing, some #0 phillips, maybe some #1 phillips. And there's lots of parts you have to carefully remove without breaking, like the GCN plate and the wire harness for the front plate. I had to take apart my Wii three times now, and I still have to use a guide. There's just too many parts to remember everything. I suggest using a step-by-step guide, and laying out all the screws you remove for each step so you can easily know which are which when you're reassembling it. I like to use several bottle caps to put the screws in. Anyways, once you finally get the case open, you'll have to remove 4 or 6 screws inside to remove the optical drive since the mod chip should be under it.
I've never owned a 360, so I can't really tell ya much. A friend of mine brought his over once for me to help him with putting it back together (he was trying a RROD fix). I don't remember it being too complicated to take apart. At least, not as complicated as the Wii. However, I do remember there being part of the case that clips in, and him break some of the plastic clips while trying to open it. Again, I would recommend looking for a guide on how to open it. Should be easy to find since there's so many people trying to fix their RROD.
Anyways, if you can't tell what kind of chip it is just by looking at it, take a pic and post it here. I'm sure some one will be able to identify it just from looking at it. There's really only a few Saturn chips that where popular, so that shouldn't be hard to identify. But I know the Wii had like a million different mod chips. And the 360, again, I have no idea.
edit: You know what, wait for other people's input before you open the 360. I know for the Saturn you'll have to open it. For the Wii, I'm 99% sure you will too. For the 360 though, like I've said, I have no experience with. For all I know, there might be a way to boot to a mod chip BIOS setup or something that'll display the model/revision of the mod chip. There might be something similar for some Wii chips, I'm just not aware of any.

Agree disassembling the Wii is a pain, even risk of damage when dealing with all the small parts and ribbon connectors. No point in that just to satisfy a curiosity of what is inside.
I replaced a Laser Eye in my Wii and posted a Guide with pictures. Also included links of the sites that helped me tackle the repair which I hopefully never have to do again.

So I held off opening up the Wii and Xbox. Just didn't have courage. I did however pop open and old PS1 and Sega Saturn. Both chipped. Anyways I tried to take some photos. The PS1 though had a metal casing I couldn't figure out how to remove without breaking it off completely. Anyone recognize the chips?
