Dreamcast Video Output
What's the best video output to use for the Dremcast, or does it make that big of a difference in terms of video quality? I'm using S-Video right now, but I've seen VGA output cables and Composite cables; which one gives the best picture quality, or are they all roughly the same (like composite vs component on the Wii).

Composite and component should not look roughly the same.

I know they shouldn't, but I've never noticed a huge difference on my Wii after switching from Composite to Component. Some games look noticeably better, but for the most part, they look roughly the same.

Wii games will look much better with component cables (especially the bright colored games like Mario, Kirby, etc) if you know what to look for.
In the Wii menu, did you switch the output to 480p ?

Yeah, I changed it to 480p, and some games definitely do look better (Super Mario Galaxy, Red Steel 2), but I guess I expected more of a difference with some games. I've also noticed that some games (namely Wii Sports) seems more jagged than with Composite.

Yeah, I've definitely noticed a lot less jagged sprites with the component cables. Especially animated stuff (like Kirby walking in Kirby's Return to Dreamland). But over all, the colors are more saturated with the component cables. Interlaced or progressive.

Oh! I see. Well, increased sharpness/clarity is part of the point of using better connections. Might want to stay with the connections you've got if you dislike jaggies.

Low resolution games like Wii Sports will show that fact when they are over nice signals. You'll notice more that the characters are more jagged because the component cables are showing you a more clear signal. The upside to that though is there is less blur, more colors, better shadows etc.
But games that were on the high end and have real smooth edges get even smoother because you again remove that blur.

Its been said many times, once you go VGA with the dreamcast, you will never go back to any other way of playing. My 42" HDTV has VGA in and the DC looks amazing on it! Crystal clear lines and bright vivid colors, Jet Grind Radio blew me away.
