Probably gonna have to go for "Chip 'n Dale Rescue Rangers" on NES. I saw it featured on one of those video game tips shows years ago, got it and loved it ever since.
Look past the weird Final Fantasy cameos, and you've essentially got the ultimate Disney games.
If we're just talking 8-bit and 16-bit era, it's hard to choose one. I played a few of them. I may have put the most playtime into Rescue Rangers, but I think the most impressive I played is probably this one

Pocahontas looks surprisingly good. I haven't personally played it but my girlfriend loved it. I think it's the only game she's ever finished in her life. lol
The Lion King. The pixel art and animation are amazing, the gameplay is varied and extremely challenging without being too unfair and the music is well tracked. I prefer the PC version, but most ports are well made. Duck Tales and Chip'n'Dale's Rescue Rangers are a close 2nd and 3rd ('cause of Capcom and perfection and all).
BTW, the 3rd (I think) pirate NES version of Aladdin is a suprisingly well-done port that rivals the originals in impressiveness.
