The Monkey Island games are a must have for such a PC fanboy as me but alas, they are expensive games in their original form and it's not like they are going to run without DosBox so I wonder if I should buy the far more recent Special Editions, wit their remade graphics and the like.
So far I enjoy the music a lot but I haven't heard reliable opinions on the graphics and such. I also heard you can go back to the original if you want to.
Any opinions?

I'd say you may as well get the remakes. You can toggle them to the original graphics if you want.
ScummVM is another option to play the originals though, if you'd prefer that.

I replayed the original earlier this year on ScummVM(on my Xbox). Still holds up well.

The remakes can be changed to the original graphics and style and are way easier to get running than the originals. Unless you want to own the originals, I think the remakes are a good choice. I really enjoyed replaying it through with the original graphics and then with the new graphics/voice overs.

I have the original and use ScummVM, but I still thought it was worth getting The Secret of Monkey Island SE so I could play it on my living room television for others to see. I do wish they would have given me the Rubber Chicken with a Pulley in the Middle as an accessory to my X-Box avatar for getting all the achievements, though. 
The new graphics are meh. I prefer pixelated stuff to begin with, but the "new" graphics seem to be nothing more than photoshopped airbrushings of the originals in most cases. Unfortunately you can't play in the old style and still hear the voice-overs, but it's hardly a dealbreaker. The new style isn't a reason not to get it.
The audio was fun. I love hearing video game tunes re-imagined in as many forms as possible, and they did a nice job here with actual musicians. I think it's also worth it just to listen to Dominic Armato voicing Guybrush again. He does such a great job -- and so do a lot of the other voice actors, some of whom are legends (Rob Paulsen, Jim Cummings).

I had to make this same decision about a year ago. I decided to just download and play the first two games on my PC using ScummVM. I think I made the right choice.

I see no reason not to. You get both the originals AND the remakes all in one package. Personally, I think the new graphics are far better than the original, but of course they don't have the same retro charm. I played the first one on the Xbox 360 and I even found the controller control scheme comfortable enough to play through the game with. You really can't go wrong with them whether it's on PC or console
