It seems most of today's games go "BANG BANG BANG!", or if you're Kane & Lynch "FUCK FUCK FUCK!".
Almost everything nowadays has realistic sound effects. Even a lot of the indie and retro-flavored games that come out now, still go for real sound effects. You hear pre-recorded footsteps instead of punctuated and filtered white noise, or the old "boop boop boop boop BEEDLEDEE BEE DOO!" of Mario's walk and jump in Donkey Kong.
Don't get me wrong, I have nothing against realistic sound effects. But there is a charm in the artifice of synthetically generated representations of real sounds that is lost in most all of today's game market and I think many games fail to generate the charm of older games simply based on sound design.
I mean, think of how different a game Super Mario Bros would be if it sounded like this:
So, are there any modern games that take an old school approach to sound design? Nothing is coming to mind for me right now.

The Bit Trip series comes to mind. Old school hard as nails too.

Treasure games? LBP has awesome sounds as well. Every time sackboy dies I smile from the funny sounds. But I don't know how many are custom and how many are realistic.

Nice topic JT. I had never gave it the thought it deserves. Given how marvelous many of the little sounds are it's truly a shame to see them gone.
The only modern game with cool sounds that I can name know is World of Goo. The sounds the goo balls do when you pick them up is as addictive as the ones in Lemmings. Which is appropiate.

I don't think beeps and boops go with FPS's. With that being said, VVVVVV is another beep-boop game.

TBH, I'm ok with most modern games not having "beep boop" sound effects. I never liked those much anyway; I grew up with 16-bit stuff, so I have no nostalgia for NES and 2600 era sounds. Although I'd rather have "beep boop" than what Kane & Lynch has.

I do recall hearing a lot of old school effects in No More Heroes. Kinda refreshing~
