I'm hoping that this will be an article in less than a month (RadarScope1 has volunteered to take this one on), so I was hoping to brainstorm what games really pushed what the NES could do technically in terms of graphics and sound.

Batman ROTJ (Great Game, really fancy gfx, much better than the genesis version)
Kirby's Adventure (Great graphics and sound, excellent gameplay)
Mighty Final Fight (Cool little brawler, great sprites)

Castlevania 3 (Japan) with its VRC6 obviously pushed the limits both sonically and graphically.
SMB3 looked amazing at its time of release. Especially if the first glimpse you caught of it was during the 80s nerd fest The Wizard!
Lagrange Point (Japan) is the only game to my knowledge to use the VRC7 soundchip, which gives it audio capabilities roughly analogous to Sega Genesis. Its impressive.
Journey to Silius has very impressive 'NES-Metal' music. One of its unique aspects is that rather than use the Digital channel for the kick or snare (as was usually done), they use the Digital channel for a simple sampled bassline. And then the kick drum uses the Triangle channel which gives it a very different tone. This gives the soundtrack a sound all its own.

Summer Carnival 92 Recca is super fast and has pretty good graphics.

Final Fantasy 3 - The shear scope of it still astonishes me.
3d World Runner - I still think it was a good mix of both Space Harrier and a platformer that was quite pretty at the time.
Blades of Steel - Solid framerate, amazing gameplay, and rudimentary speech, all lead to one of the best sports games ever made.
Gyromite - integrating ROB was bloody amazing at the time (even if all he could do was go left and right).
Megaman 6 - beautiful is a good word to describe it, though it did lag sometimes.
