If you could only have one console to play RPGs on, what would it be?

I would have to say PS2; because technically I can play Playstation 1 games on it as well. :P

And if I ever get bored and beat every single RPG for both systems; I can drown myself into some MMOs.

Ooh... SNES for me (but only if we're allowed imports).

Dragon Quest V and VI (not to mention spanking looking remakes of the first 4), Final Fantasy, Mana... yep, SNES.
Currently playing: Dragon Quest Monsters: Joker (DS), Shenmue (Dreamcast), Dragon Warrior VII (PS1).

I'm not a RPG expert, but I think that either the PS1 or the PS2 have more and better games than any other console, so I would stick to the PS2. With Final Fantasy, Dragon Quest, Dark Chronicle, Shadow Hearts, Shin Megami Tensei, Wild Arms, Suikoden or the recent Rogue Galaxy, just to name a few, one has a lot to play on this system.

Oh, and I just mentioned the typical Japanese RPG's, but there's also a lot of Strategic RPG's and a whole bunch of Action RPG's available (I love the latter).

PS 2

You get PS 2 and PS 1 games and you don't have to worry about lost saves through dead batteries, which essentially kills the desire to play ANY S-NES rpg(unless you go with emulation)

I couldn't go on playing RPGs without my Panzer Dragoon Saga, Grandia, Shining Force III, Dragon Force, etc...

I would say PS2 because like others have said here, you can play PS1 games as well. If you say no PS1 games allowed on PS2 then that would make it more interesting and thus force people to vote either PS1 or PS2.

I was intending PS1 and PS2 to be separate...

Now thats a tough choice!

I would probably go with PS1. Although there quite a few PS2 RPGs that I have yet to play.

Snes gets my vote for the obvious choices: Square and Enix's games, along with some surprise others. I mean who thought farming could be that fun? Well other than harvesting a small crop with a scythe.
