I know this question is better suited to an anime forum, but I can't stand the regular posters on any of them I've ever visited and I value your guys' and girls' opinions.
I've watched lots of anime, but there are a bunch of newer series I don't know about and probably a few older ones I haven't seen yet too. I was wondering if anyone had some insight or knew of ones I haven't heard of yet.
So you know what kinda show I'm looking for I'll list some favorites - I'd highly recommend any of these you haven't seen yet:

Gantz is pretty crazy, I'd say worth watching. Really mature content.

I personally enjoyed Gantz quite a bit, though opinions on it differ somewhat and it's not particularly faithful to the manga. I would suggest it if you like action and violence, and aren't put off by a slower paced story.
I've watched about half of Hell Girl, I liked it at first but it just starts to drag on after a while and it hasn't held my interest. If you're interested in a good psychological thriller with strong horror elements, I would definitely suggest Requiem From the Darkness before anything else. In this category I would further suggest Perfect Blue, or really anything by Satoshi Kon.
Have you ever seen Vampire Hunter D? I would highly recommend those movies as well. I would also suggest Berserk, as it fits into your tastes for action and is also somewhat comparable to Claymore.

Dark and has plenty of twists and good Jap voices. My wife watched all 51 episodes and she does not watch anime. Best of all it is on Hulu for free, the whole series.

My favorite anime of all time is Irresponsible Captain Tylor:
The first two episodes are on youtube - legally. Its a space opera comedy and has me in stitches every time. Atleast give the first one a go.
Other series that I think are worth your time:
- Record of Lodoss War - the original epic fantasy anime
- Scrapped Princess - a newer epic fantasy
- Chrno Crusade - 1930s pulp styled alternative fiction - Prohibition years with demons
- Panda-z - uhhh yeah:
- Gunparade March - giant robots, highschool stories, explosions. A fairly deep plot that is solid for most of the episodes.
- Lupin the Third - THE best anime of all time. Its about a super thief and his buddies as they go on madcap capers all over the world. That and he is the descendant of Arsene Lupin (the French Sherlock Holmes that dealt with fantasy elements).

I haven't watched anime in a long time, but I was quite obsessed with it at one time
Gunsmith Cats is a lot of fun. I think if you like Cowboy Bebop you can probably get into it.
I love the original Tenchu Muyo OAV or is it OVAs. I never get that right LOL. Much better than Tenchi Universe and Tenchi in Tokyo
I don't remember much about the original Vampire Hunter D but Bloodlust was a visual, cinematic feast
Slayers is tons of fun. You NEED to watch Lina Inverse cause some mischief at least once
Rurouni Kenshin is EXCELLENT. Very highly recommended. You have to watch up to and through the Kyoto Arc. After that, it veers away from the original manga. You must watch the prequel too, which takes a completely different tone
Ranma 1/2 is classic Rumiko Takahashi. I think its first season was the best though
Though I wasn't a huge fan, I'm surprised no one has mention Neon Genesis Evangelion yet
The various Gundam shows are worth checking out, though I'm not the one to ask which one is the best though
Berserk is worth checking out
Inuyasha is a big commitment as you said, but I highly recommend it. It doesn't matter if you don't watch all of it(I don't think I have), you'll enjoy what you do see of it
As for movies:

Princess Mononoke
Akira
That's all I can think of at the moment. I know I am forgetting other classics. Unfortunately, I don't have my anime collection in front of me at the moment

Scrapped Princess is a great series to check out if you like a good fantasy adventure. It's not one you're likely to hear about often either, but it's excellent all the same.
