If this is a down right dumb question, please forgive me. I'm not too tech savvy.
I'm trying to narrow down the best option for a fight stick for the PS2. I really love the design and aesthetics of the Hori Stick for the Wii and am curious: How difficult / possible would it be to take that stick and retool it for PS2 or Gamecube use?

It's not difficult, use a PS1 Dual shock, as some adapters have trouble with PS2 pads;

You could run those parallel to the Wii wires, never plug both in at once though.

For 100 percent compatibility a lot of work. But it can be done. Soldering internal buttons to a PSX PCB.

Here is a more permanent solution that I did to my Madcatz TE SFIV stick:

This board will allow you wire in each of the buttons of the existing arcade stick, and then connect any other console extension cable to the board and have it work.
So far, my TE stick is working with XBOX 360, SNES, PS2, PS3 and GC.
I know this board relies on USB power to work, so I'm not sure if your stick is wireless or what not, that may be a dealbreaker there.

Or just get the Pelican Universal arcade stick. Works on GC, oXbox, and PS2. I have both the universal and oXbox version and they work great ...

Thought about that. Problem is they don't seem to make those any more and finding one hasn't been too easy. Buy yourself a Mayflash PS2/PS3 USB arcade stick and then Sanwa replacement parts. Modding it isn't hard and its actually a lot of fun to do the work. Makes you appreciate the final job all the more. The Mayflash is awesome, eight button layout and the perfect size and weight for sitting in your lap. I highly recommend it.
You can then buy PS2 to GC/Xbox adapter and have one stick that runs on the PS2, Xbox, Gamecube, Wii and PS3. Plus, Mayflash sticks can be found now for less than $25 in the US.

I've got a Hori Wii stick and think its great also, but modding a cheap stick already PS2 compatible with higher quality parts is probably a better way to go. From what i've seen it doesnt seem as daunting a project as straight up modding the Wii Hori, plus you don't have to worry about fucking up a harder to find product.
I've got a cheapie PS2/usb stick that i've been meaning to upgrade, but mostly just to make a project out of it, because for what you may spend in parts and possibly tools could go quite a ways in just buying a high quality stick.

Well the decision has been made for me.
I was going to take everyones advice and get the Pelican or Mayflash. Turns out I didn't need to.

Walked into GameOver in North Austin this morning and found this in like new condition with original box and wrapping for only $50 which is about $25 cheaper than the only other one I've been able to find online.
So...go team.
But I'm still interested in this idea of taking an existing stick (like a Mayflash) and modifying it with aftermarket parts. What in particular should someone look at replacing?

Everything. Cheap sticks can only be made into winners if they have their joysticks AND buttons replaced. I'd recommend going with sanwa. I put up a tut on my blog on how to modify a Mayflash PS2/USB stick to use with Hori buttons, but the principle is the same. Before I modded the Mayflash, I did it for my Hori EX2.
