Lay them on top of the rice or mix the rice in? What is your take on it?
I ask because I made some jambalaya tonight with smoked andouille, chicken and shrimp and at the end of cooking I threw the rice in to absorb the rest of the stock. Not sure if I like it that way or not. Makes it feel more like it is just red beans and rice. *Shrug*

Gumbo should have a scoop of rice in the middle of the bowl.
Jambalaya is mixed with rice.
Beans and rice is mixed together while cooking or the beans are served over the rice.

Thanks for the clarification, I always forget. The jambalaya came out pretty damn good even with the crappy andouille I had. I ate three bowls, it is no wonder I am getting fat.

I like to make black bean burritos from time to time and also black bean salad. Black beans are super good for you. Of course they are probably better if you soak dry ones instead of eating the canned ones but still good for you I am sure.
They have a pretty decent Goya section at my local grocery store up here. That is where I get my whole pickled jalapenos and most of my beans and canned green chilies.

I eat gumbo and jambalaya with a fuck ton of hot sauce. That is the only way it should be eaten haha.

I put hot sauce on a lot of things, gumbo and jambalaya aren't included on that list. If it's really good gumbo and jambalaya putting hot sauce in them is tantamount to putting ketchup on a ribeye, imho.

Goya is the stuff! that black bean salad sounds killer. Love the can black beans with left over rice for that quick gotta eat now snack fix.
Speaking of beans, ever eat Edamame? Another great zap in the microwave, eat like peanuts. Squeeze, pop in mouth.

Agreed. Spice your gumbo with cayenne while cooking, not after. I made some killer gumbo a couple weeks ago. Amazing how flavorful shrimp stock is. Octopod, this thread is so funny cause Ive always wondered if I could do the same thing.. make the Gumbo and then throw in the rice. So I guess it works and I guess its delicious. Also this weekend I will be making Gumbo myself with a nice dark roux mmmm I cant wait. I tipicaly make a giant pot and eat it all week long (with a nice scoop of rice in the middle).
