I got 2 busted Game Gears for cheap recently so today I set about changing the capacitors. I fixed the video problems of one console but when I tried to remove the capacitors from the sound board they all came off with the solder points attached. So two questions:
1. Is there any way I can fix the sound board once the solder pads came off? Or is it totally fornicated?
2. Is there some special way of removing the sound board capacitors? I would prefer not to ruin my second board as well.

It might just be that when the caps barfed their guts out it messed up the traces. Since you have another GG there, if you can't just drag a little solder to where the trace came off to the mounting hole, you could use some small bits of wire to wherever the next component is to recreate the trace. I don't think that's a multilayer board with traces sandwiched in the middle.
For the other one, just make sure your soldering iron is getting hot enough and don't pull hard on the cap when removing. Just be careful.

Hobie-wan, you were right. It was because of corrosion. The caps from the second board came off without a hitch. The damaged one is beyond any chance of repair though. I'll just buy a sound board from eBay to replace the one that died.

Glad the second one worked out ok. You can't use the second board to see where the missing trace led to and hack it with a piece of wire?

If it didn't eat the PCB too bad you could lay a new trace, but it's normally not worth the work (especially for a GG), unless it's something like laying a new trace for a Neo Geo cart or Chronotrigger.

The damaged board looks like something bled acid all-over it and then dragged it through a bush. Backwards. In a sand storm. Twice.
