This is a pretty hard question considering my limited exposure to each system's libraries. I own five PS1 games (all downloaded on PSN), two (US) Saturn games, and four (two of which are the GC ports of DC games) for Dreamcast. Considering I had a DC as a kid, I'm most familiar with it's library. If I had people to do multiplayer with, I'd choose Saturn. If not, I'd stick with PS1, since it has the best single player library.
But we all know the real answer is GameCube.

I love the dreamcast but the ps1 has soo many games out there. Anything you want rpg,action platformer, arcade, 2d, anything. The dreamcast has a great deal of games also but alot of dreamcast games were also ported to ps1. Not graphically as good but still the ps1 library is crazy. Go to a flea market and you can find ps1 more than dreamcast and saturn. If I was you I would keep the ps1 and if you can do both then dreamcast.

If I could only keep one I would choose the Dreamcast. It has a few very good RPGs and racing games on it. However, most importantly it has several absolutely timeless fighting games I could always play with friends.
