Killer7 (GC) is aging like fine wine, even moreso than a game like Windwaker. It already seems more insane, beautiful, and brilliant, than when it was released 6 years ago - if that's even possible. But seeing as it's my favorite game ever, I'm probably biased.
I often find SNES graphics to be more visually striking than anything current gen, very often. Not necessarily anything revolving around the FX chip - but something like Super Metroid, Secret of Mana or Yoshi's Island (especially Touch Fuzzy Get Dizzy), etc. Even the atrocious Rise of the Robots still makes me wonder how they pulled it off on that hardware.
Genesis can pull off some beautiful 16-bit too; the beginning of Sonic 3, and Comix Zone come into mind particularly, but it doesn't quite have the same affect on me as the look of the SNES does. Same goes for the TG-16, but I haven't owned one in years.
I'm surprised by how well Super Mario Kart still controls to this day. The SNES' d-pad really shines with that title, I've always felt.

I'm still blown away by a select group of Atari 2600 games.
Yar's Revenge: Still one of the trippiest games I've ever played. The constant hum from Yars, the odd rainbow safe zone, and there is nothing quite like the ending of each level; the screen goes nuts.
Missile Command: One of the most difficult and frustrating games I've ever played, but I still love it. One sound that is etched into my brain is the sound the game makes when you finally die. It's loud, devastating, and definitely lets you know the game is over.
Star Raiders: This is what I believe to most likely be the first Space RPG. Maybe not in the traditional sense, but it made me feel like I was in control of an actual space craft. The game came with a comic to read, and a special keypad controller exclusively for the game that really added to the gameplay. And I still love playing the game, and sometimes like looking just at the box and manual. The box reads at the bottom "Sears Roebuck and Co., BSC 41-3, Sears Tower". If only people in the Sears Tower were still designing games...

i just picked up a PSP 3000 about a week ago, and totally blown away by the graphics it can put out, they are dare i say better than PS2? or at least on that small screen they look better.

The PSP's screen is lower resolution than what your typical PS2 game runs at, but does have the advantage of using native res, progressive scan all the time. Pretty much any image of something looks better when shrunk. People are more attractive, artwork looks better. COD 4? No. Excruciatingly boring and predictable game. MGS 4? Some moments near the end were pretty damn intense, but only if you've been a long time fan. Demon's Souls though? Holy shit. To quote the7k (I think), it put my faith back in the industry. Red Seeds Profile had some pretty intense shit going on at the end too. Deep (if not absurd) stuff.
