Play it cool, wait and see, read body language to the best of your ability...if you continue to get an interested vibe, then bring up the subject again in an off-hand way: "Oh, btw, any ideas for what we could do when we hang out?" I find this isn't too pushy a question and is much less serious than asking straight out "what are we gonna do on our date?"

You should attempt to follow EVERY SINGLE BIT of advice presented here, all at the same time where humanly possible. Make sure to invite us so we can watch you literally explode from the contradictions.
Honestly, casual is probably better than serious, starting out. You don't know her cultural or personal context, and a casual lead-in is a great way to learn that from her.

Basically don't freak. Just stay calm and be yourself. When you go on your "date" just be sure she is comfortable and take things slow. Let the relationship develop naturally don't try to force it or stress over the minor details.

Also, at the OP ... wow. I haven't read such an overwrought block of text since I forced myself to slog through Twilight. Just do it! Ask her, go on the date, see what's there. Life's too short to spend it wondering what she's thinking and stealing smiles through a window. While there should be a place for that in everyone's life at some point, once you've established the interest, act on it. However, as a shy girl, I did like it when the man took the lead, but would let me "come out of my shell" at my own pace.
If she's shy, I wouldn't text her just yet. Coming on to her too hard would scare her off.
