Someone should start a "barely beat" a game thread, where they share a time they completed a game by the skin of their teeth, or just dumb luck.
On the topic, it seems like this happens to me from time to time, but not much that I can recall at the moment.
Parasite Eve was mentioned in the 1st post. I couldn't beat the final boss either. Next time I play through the game (my old save is long gone), I'll be more judicious about what weapons I upgrade and use.
About SNK bosses, I probably suck at fighters more than most here. But dammit if I'm not persistent. Eventually I find a couple weakness, cheap tactics, and luck out to victory.

Castlevania Legends on the Game Boy.
Everytime I try to beat it, get to the last section of the Dracula boss fight, and then get stomped by the spinning fireballs. Not to mention that my health is typically already down a ton.

Forgotten Realms: Demon Stone
Star Wars: Knights of the Old Republic
Both for original Xbox. I was very close with both, but my Xbox died and I lost all my data. I never had the heart to restart, although I guess Demon Stone was pretty lightweight...

Super Mario Bros. 3. One summer as a teen I was inexplicably motivated to beat this game, which I'd never been driven to do before -- and when I say "beat," I mean all the way through, start to finish, without Warp Whistles. I was awesome and having a blast. I built up my skills, stockpiled my P Wings, made it further than I ever had as a child -- the final castle! -- and then...
we had a blackout.What made it even worse was that the blackout lasted for only a second or two. Even though our lights, our A/C, and every other electrical appliance in the house went down for that brief moment, the NES never fully turned off. It was frozen there on the final worldmap when the TV came back on. I had to press the restart button myself to put it out of its misery.

Dead Space 2 for 360. I'm at the last and final boss I just don't have it in my heart to end such a wonderful game.

Mobile Suit Gundam: Zeonic Front for PS2.
I can not figure out how to clear this final stage without getting my team violated by that goddamn Gundam.
Also Dragon Quest 6. I made it to the final form of the final boss and he crushed whatever spirit I had left, as far as finishing that.

That games is evil and has taunted me my whole life.
There's a reason Auntie Pixelante used Mighty Bomb Jack as source material for
her own game about sadomasichism.

Also Jaws. I freakin' hate Jaws. Every time I feel like I'm going to beat that damn game, but It's really really hard to stab a shark repeatedly with a boat.

It's definitely a terrible thing. I thought I learned a lesson and bought a memory card so I could back up my saves... then learned that many games don't let you copy the save-data.
