I really enjoyed playing Baseball stars and of course King of the monsters always full of fun.

I kinda always thought those were big back in the day.

Windjammers
Pulstar
Fatal Fury
World Heroes
Art of Fighting
Sengoku
King of Monsters

The later defining games were:

Samurai Shodown series
King of Fighters
MoTW
Last Blade series

IMO

Don't you dare forget to put Windjammers on the list. That game definitely defined the NG as it was very unique and lots of fun.
