While they can seem a bit superfluous, the more rudimentary achievements are pretty important to the overall design. First because they establish the system in a way that is basically unavoidable. While a seasoned gamer like yourself would be very familiar with the system, what about someone who has never played a game with them? Or really played games at all? Those "Yay, you did the tutorial" rewards ensure that they're introduced to the concept.
In turn, things tend to escalate from those freebie cheevos, if you want to get the platinum. The ease in getting them might help sell people on the idea of pursuing more, including the more difficult ones.
Though that can include the "troll" type ones too. I mean, if there's a trophy for
that, what else might there be a trophy for?
'course, I suspect that there's also a data collection aspect to them. Having trophies for basic game actions might be the acceptable/anonymous way for developers to collect metrics on how far players have gotten or something. Or just a further way to sell the idea to other players. I mean, if you can see that only 0.5% of players have collected a trophy, maybe that gives a motivation to try and get it yourself.
