Since I haven't played Sonic Mania, I'm gonna have to say I Am Setsuna. I know it first came out in 2016, but it came out on Switch (and that port obviously came out in 2017) which is the version I played.

I haven't played it yet but I've heard nothing but gushing praise for Hollow Knight.

I'd agree with that, but I left it off too because it was just Switch 2017. Shantae: Half-Genie Hero is an impressive 2D platformer with charming art and spot-on physics. This game was released digitally last year, and the physical release came out this year. The switch version also came out this year.

Of what I've played and beaten, it has to be either Blaster Master Zero or Metroid: Samus Returns.

I had always meant to play through the game someday. The new version was all the excuse I needed. The art style is amazing. I love it. Being able to switch back and forth is also really fascinating. But the final product is what I always envisioned games in the future to be. That, and stuff like Cuphead. I'd love to get more of this awesome hand-drawn art, and see traditional animation make something of a comeback.
