You're right, it would be easier. I actually have said adapter, but I have height restriction issues in the shelf where the console is so it won't fit with the adapter. I just use a game genie. No issues aside from not being able to play mode 7 games.

Kirby's Dreamland 3 and Super Mario RPG both use the SA-1 chip, and have the extra pins. If you're gonna put them in SFC shells, be sure to use a SFC cart from a game that uses SA-1 or the Super FX chip.
