I have not. Only composite and s-video to CRTs and plasma with my Saturn.

I use a CSY2100 converter and a scart cable from my sega saturn to output in component 240p to my HDTV 40in 1080p (just to give you an idea).
Here is a video showing similar comparisons between a JVC X'EYE in terms of composite vs component. Didn't have time to make one for the sega saturn yet!
