I think you'd be better off getting a really nice desktop kit computer and a netbook if you need to travel somewhere.
Well that's what I would do.
I also think this is usually an option people should consider (it is usually what I do), but for some people a gaming laptop is indeed the best choice.
At least one thing can be said, the laptops consume less power.

Lenovo ThinkPads are fantastic, if a bit pricey. If you want to do some medium-light gaming on it I'd recommend a T420 w/ nVidia graphics. Nice balance of portability and power.

After doing some research, I decided on this laptop, unless I hear of an upgraded version coming: http://www.newegg.com/Product/Product.a ... 6834152266
It seems to have everything I want, but the processor seems a tad weak. Is that something to be concerned about?

Unless you plan on encoding lots of videos or other processor intensive tasks then not really.

I'm not sure how the mobile i7's compare to the desktop versions, but you should be good. I have an i7 920 in my main desktop (which I think is the slowest i7 model) and it's just been insane. I can run DVD Shrink while still doing other things and not even notice.
