it's probably easier to run the PSX emulator and run a FF7 disc image from that then it is to do the PC versions of FF7 or 8

I played Final Fantasy 8 about two years ago on Windows XP. Wasn't very hard.

That last link I listed is an up-to-date compilation of most of the worthwhile mods in a single installer starting from the official update to the latest graphical enhancements made and several selectable music compilations. The size is probably due to the higher quality FMV patch.
Having played through FFVII several times using all the latest enhancements each time, the difference between emulating the PSX version at high res vs the stuff that's done to the PC version is incredible and well worth some extra effort. Even without the remixed graphics the PC version's worth it just because of the better motion capture quality. When you play the PSX version at high resolutions, the 3D stuff wiggles all over the place because the vertexes snap to the original resolution.

My roommate back then was playing the PC version. I thought there were 2 extra bosses? Emarald Weapoon and Diamond Weapon or something?

Diamond is part of the story.
