Don't get me started on how I want to upgrade to Triplehead with proyectors and 3D involved.
And yeah, Descent can be really bad on multiple monitors. Even just on a widescreen one. It takes a long time to get use to it, and it helps to do it in the dark.
When I get the game, I will absolutedly try it
option of swapping out the controls from racing to flying to fps on the fly,
There are some people who build their MAME cabinets so the control panel rotates and you can access another one underneath. You may want to check it out.
Finding games that work well on multiple monitors can be a pain.
Nah, I have never had any problems. Checking the SofTH forums or Widescreen gaming is often all you need.

I cant do 3d, Ive thought about projectors aswell. Namely LED projectors like this one:

1000 Lumen LED projector with 30k hours on the bulb! Yes please. However I will be buying tvs regardless, might add a projector to the setup later though - right now it is over the top.

If it helps Descent 3 is easier to get use to - since you are not in the tunnels.

Ive seen those, they are kinda big for what I was planning on doing. But good looking out.

Me want! Unfortunatedly I don't think my parents would allow more "screens" in my room, the don't even let me have a small TV

I have to say, they are kind of right. But screens everywhere is an awesome thing! I want my house to look like an evil genius lair.

Descent 3 is not on my list but I may pick it up if I have problems with the first one.

You may also consider different panels that you can easily switch. I wanted to do that but, in the end, I found it easier to just put my stuff on it.

However, two Beatmania controllers don't fit in my stand so I will need to tinker something. Probably a piano stand because a wood panel sitting on my keyboard stand will move while playing.

PD: I kind of expected people to comment on my Lego but guess the setup stole its thunder
