Because varied does not necessarily mean good.
I tried to like the PS1, I really did. Besides the JPRG explosion (Grandia, Star Ocean, FFVII, FFVIII, Vagrant Story, Parasite Eve are the ones I've played) there are no PlayStation games worth playing. The other one is Symphony of the Night; that is good. Other than that, I cannot play the games. The graphics are so damn ugly. I just can't do it. And I really tried. I played Tomb Raider, Metal Gear Solid, Spider-Man, Resident Evil and I just can't get past how much they make my eyes hurt and my hands strain at the inevitably shitty controls.
I understand the gigantic leap in technology was more than enough to keep people interested in 1996. But it's now 2010 and that shit SUCKS.

I hear people say this about the NES and SNES a lot too.

That is a pretty harsh rash statement.
Every console has its great crown jewel games. The old adage of better graphics vs great gameplay once again applies here. Besides that little LCD screen really makes the shrunken down pixels look beautiful, a great transportable compact system.
Also the PS2 sometimes has problems trying to read CDs.
In addition, there are a few good PS1 games that will not work.

Final Fantasy Anthology, at least, works fine I know. The only "problem" is that FF5 will occasionally have a garbled save screen. It's a purely graphical glitch that can be fixed by exiting and then re-entering that menu.

I haven't really heard people complain about the controls of the NES and SNES.
