Okay new question: if I got the Gamecube S-Video cables, is there some sort of Radioshack converter so that I could just plug the S-Video Cables straight into the DVI port on my monitor??

Yes. Did you read my CRT vs LCD link? Samples there. Same scenario though, an expensive option. there seem to be a ton of TV Tuner cards you can buy for under $50 that feature S-Video input. Would that work?

I forgot about those, great idea! Not a direct signal to the monitor though, unsure of lag, all capture cards go thru the computer. I mentioned this on another thread, but the idea seemed to get dismissed very quickly: ever consider a VGA box?
The VGA box is standalone, meaning you don't have to install it in your computer, AND there is not issues regarding your PC being over/under specs for timing. I' have something similar to this (a more expensive model that handles component and 1080p resolutions), and it works great if you monitor has a VGA port to spare.
