Weapon X is probably my favourite comics ever! The whole thing was written, inked and coloured by Barry Windsor-Smith. It's an absolute masterpiece. There are entire pages that go by without any dialogue and it still manages to tell a story that's so compelling it's hard to put down. Brilliant stuff.
I also followed the whole Age of Apocalyse saga when it came out. It's a lot more elaborate storytelling wise, but you can buy all eight separate lines in 'gold' covered albums to make a fairly complete story. Since it all goes down in a seperate parallel universe it has a clear start and end. They comics you'd need are titled X-Calibre, Gambit and the X-Ternals, Generation X, Amazing X-Men, Astonishing X-Men, Weapon X, Factor X and X-Man. You'll almost certainly require X-Men: Alpha that tells the beginning and X-Men: Omega that tells the end. Finally there is the (what I would regard as optional) X-Universe that tells a bit about what the heroes get up to.
