Was it ends and pieces by any chance? They have a much stronger flavor and chewier texture than normal bacon, but I actually prefer it. It's certainly a better choice for cooking with.

Possibly as I didn't take the time to google "ends and pieces".

The cuts of bacon were closer to the loin than the belly. Probably cut close to the neck like capicola. Too meaty to be called bacon, but is perfect for soups, stews, green beans, baked beans, etc. But it's a no-go for "Bacon and eggs".


Buying a new grill this weekend and I am beyond excited. I'm going the charcoal route as I always have as although gas grills are great I prefer the routine of starting a fire with charcoal.

Need to buy a grill cover too. Would a rain proof tarp prevent rust?

We have a place up here called Seabolt's and they have Smoked Salmon Pate which is basically smoked salmon and cream cheese together. So good!

I have a cousin in town this weekend, I am debating on wood plating some salmon or doing a venison roast.

That is what I am leaning toward. I just takes a day to thaw and a halfday to "marinate." I have just enough time to do it right

Roast cut. If you want to get specific, doe upper left hindquarter.
