Somewhere above Fastbilly and Luke were talking about making zoodles, that is "zucchini noodles". This sounded great to me, so I attempted to make some myself last night. I made the "noodles" just fine, that is, slices of zucchini strung out in strands not entirely unlike noodles. However when I went to sauté them in a pan, the zoodles lost their consistency and broke down into globs of zucchini mush. Granted, the mush still tasted good, but these weren't the zoodles I was hoping for.
So... what's the secret to cooking up zoodles that end up with the texture and fortitude of actual noodles?
