Made hot browns over the weekend for the Derby. I cashed in some favors to get better ingredients. One friend killed a turkey about a month ago for us, I smoked it on applewood a two weeks ago and froze it, he had previously killed one of his hogs and sent me thick cut bacon. Another brought fresh tomatoes from his green house. And yet another friend made Pain de mie (fancy french bread). So I just had to make the morenay sauce and we were solid. Ofcourse I buggered up the Morenay sauce by running out of cream and adding the flour too fast. But it worked out in the end.

Made one of my favorite dishes the other night; it's glamored up diner food. Roasted garlic mashed potatoes, green beans, fresh bread, and Salisbury steak.
I roast a few red potatoes as I prefer the flavor of them over boiled potatoes. Then I add them to a stew pot, skin on, with a good amount of butter and heavy cream. Add the garlic and chopped chives, and you've got yourself a cheap and easy, plus delicious mashed potato.
Green beans are also simple. Clean them, cut 'em, and throw about two cup of them in a sauce pan with 1/4 cup water, plus 1/4 cup olive oil, bring to a boil, wait five minutes, add some s&p and away you go.
Bread is an easy to make rosemary focaccia.
Salisbury steak doesn't have to be cube steak. I use ground chuck for the "steak" About one small onion diced, a tbsp of tomato paste, a tbsp of Penzey's Chicago steak seasoning, a bit of liquid smoke, some Worcestershire sauce, an egg, blend it together and you've got four to five large patties. After the patties are cooked, reserve a little of the left over fat, add a cup or two of beef broth, a pad of butter, two tbsps of apflour, a pound of sliced mushrooms, and you've got a delicious gravy.
Cobb salad tonight.

Liver Pate with mushrooms and potatoes tonight.
One of my wife's friends grandmothers sold her house and gave us everything in her freezer. She had a perchance for Liver Pate and Birdseye Chicken Alfredo.

My daughter and I imported a bunch of candy from Japan and tried it last week. The two things we had that were truly good:

My neighbors invited me over last night for grilled turkey legs and wings, Italian sausage, sweet potatoes, and more side dishes than I care to type.
The turkey wings stole the show.
In return, I'm having them over for sweet potato, black bean chili.

Dirt cheap, incredibly delicious. And with all recipes that don't require baking, you always have some wiggle room. Use green bell peppers instead of red and orange if you're on a budget. Throw in some jalapenos. Add some extra adobo sauce. Serve it on top of rice. It's your world.
