I have all 4 sitting on a shelf unplayed but I cant decide what one to play first.

Honestly, I don't have too much knowledge of those games. I've heard in general that Blue Dragon wasn't that impressive, but take that with a grain of salt as I don't remember where I heard it.

I cannot comment on Last Remnant. Here's what I see:
Blue Dragon's combat system is very similar to FFX's turn based system. Character development is through a FFV-esque job system. Overall the biggest thing I've seen so far is that there isn't a real sense of story to it. It mostly feel like a lot of "we started doing this, then got sidetracked, then met this guy who needs to do this task, etc". Also, there's a fascination with poo.
Eternal Sonata has a gorgeous color palette that's unlike anything else out there, which is a real breath of fresh air. The combat system is interesting and continues to evolve throughout the game. However, if you despised the timed hits of the Mario RPGs then you won't like it, as timing your defense is critical if you don't want to be wiped out by mid-late game random encounters (to say nothing of boss fights).
Lost Odyssey is the most FF-esque of the three. A good old fashioned raw turn-based system with an optional timed bit (on an attack you can try and time the hit to get a bonus, but it's optional) and an interesting two-tier system of party members. The mortals gain skills through level ups while the immortals gain them FFIX style of equipping accessories and gaining SP, but they can also learn them from mortals. They also do some interesting things with camera angles and picture-in-picture. And they have the largest selection of voice options I've ever seen (Japanese, English, German, Italian, French). The story, while cliche, has so far been well executed, and even managed to nail my emotions at one particularly sad part.

I would play Lost Odyssey first I own all 4 of these RPG's and just to add to the above info was my favorite of them.
Blue Dragon was a letdown for me not the game play mechanics or graphics. The voice overs and story were just really cliche and nothing that special.
Last Remnant I just finished early this week and it's not bad but the game is full of tech flaws mostly due to UE 3 engine. I did like the characters and story was not bad but expect to spend a long time in this title. There are some gameplay mechanics I didn't like not combat related but some of the grinding and hunting rare monsters is terrible to power up weapons. I clock about 80-100 hrs. on this game took me like 1 1/2 months to finish.

Don't think there is a demo. It's worth playing, there's a lot of game there and I bet you can get it cheap these days anyways.
