Wow that game looks solid from the link. It did make the game look like 1 vs 100 though which is kind of weak but the description below says otherwise.

I didn't expect this many replies, so I can't direct quote everyone or it would just be a mess. I appreciate all replies so far though! Glad to see there are other people on this board into this sort of genre. I will just post my thoughts on games mentioned so far.
Red Baron
I used to play this on my 386 many many years ago. I spent many hours dogfighting in it. Definitely a class act for its time.
Secret Weapons over Normandy
This one looks like a lot of fun so I ordered it for Xbox.
You tried Air Force Delta on PS2 but the first AFD on Dreamcast might be better.
The PS2 one is a mess, I did beat the Xbox game in this series AirForce Delta Storm though and it was pretty fun. I will give the Dreamcast one a go next time I hook my Dreamcast up.
Sky Crawlers Innocent Aces
I have this one on Wii but haven't play it yet because I'm waiting until after I watch the movie. IIRC it was made by the Ace Combat team so that's a good sign.
Descent and Terminal Velocity are DOS-era classics I loved.
I played these back in the 90's. I suck at Descent and never really enjoyed it. Terminal Velocity did not run well on my PC back then, so maybe I'll give it another shot.
Secret Weapons of the Luftwaffe
This is one I have not tried yet. I think Secret Weapons over Normandy is a spiritual sequel? I'll see if GOG or DJOldgames has it.
Sky Odyssey
I rented this many years ago and I sucked at it. I didn't know it had combat sections though. I think I'll pick up another copy of this because it got solid reviews.
Wings of Prey
This looks pretty good. I think I will go with Birds of Steel on 360 though as its made by the same developer and looks spot on.
Strike Commander
This one does look fun, gonna GOG it.
Crimson Skies
Beat this one on Xbox. The first third of the game is pretty good.
Tom Clancy's HAWX
These games look great! I am ordering these on 360 this weekend.
Project Sylpheed
I had not heard about this, but I will check it out.
Over G Fighters
Had not heard of this! Gonna watch videos of it and see what I think.
Again I appreciate all the suggestions guys.
So last night I put some time into Heatseeker on PS2. This game got lackluster reviews but I had a lot of fun with it. I'd recommend it so far if one is looking for arcade action jet fighting. I think it came out on Wii too.

I'm not recommending this, I just want us all to be reminded of the nightmare of in-flight refueling and impossible landings on air carriers.

Top Gun 2 was good stuff and you could fix the controls to fly (up/down reversed) like an airplane. Long ago I could always land that thing, now it's just death.

Sadly it has yet to be added to GoG.com and who knows if it will be. They seem more captivated by Indy and SW games, SCUMM engine stuff and Grim Fandango.

Was referring to Lucasarts games, not the whole library. They just added more flight games just the other day.

Oh, as far as Terminal Velocity is concerned, it had a followup for Windows '95 called Fury 3. I actually had that bundled with my PC, and it was pretty decent, even if it doesn't do anything different from TV.

I remember that one (TV.) That one I played to death back in the day and cleared it a good many times. The game always seemed pretty fluid and fun flying just over the landscape taking down all the random stuff around, yet going inside areas was pretty nice too. I never got into Fury, seemed like it didn't do much to be worth the effort.

TV and F3 were all right. They each had enough to be different. I believe TV was one of my first CD-ROM game purchases.
