it's really up to you what you feel comfortable doing. If you have any detailed experience soldering, you'll be fine with controllers. I"ve had no problem with arcade sticks made by soldering to controller circuit boards; a ton of people make them that way.
the only problem i could possibly think of with using joystick PCB's as opposed to a keyboard encoder would be that after a reboot, one or the other joystick may be picked up by the OS first. If the same one ends up as 1P every time, you're golden. otherwise theoretically you'd have to plug the 2p stick in after reboot.

I just made my first one and it was kind of confusing until you figure out where everything goes to and with all the wires all over the place and it's kind of frustrating when the wires keep coming loose from the control,the main problem I had was wiring the stick backwards on accident,which is kind of hard to get it right because down is up and left is right on the arcade stick.

So my buddy brought over the "buttons and joystick from an old arcade game - street fighter style" as he called it, but it wasn't an old panel - it was a Hotrod arcade controller!
He got it off some dude at work who gave it to him thinking it was supposed to be attached to a real arcade cabinet. My buddy knowing that I was into games picked it up and told me that it would be great for parts - hence me asking how to wire to old PSX controllers in this post.
So now I dont need to worry about wiring anything instead I have to mod my cabinet so the Hotrod fits properly!
