Gladius is an excellent game, but I've never played anything but the GC port, so I have no input on the other versions.

I'm a big TMNT fan. To me, the unlockable arcade games are the biggest draw here. I've been holding out, outside of the Resident Evils that are taking up a must in my collection spots. I do have a few cube games that just aren't going anywhere 
Custom Robo- this game always attracted me to the GC, its unique arcade style with lite RPG elements and customization it's overall average but simple enough to always enjoy.
Gladius- This is a SOLID SRPG. Definitely worth it on any platform, but the consensus has pointed towards the GC version being better choice.
Goblin Commander- Another multiplat, that just sits well on the GC IMO. Great tutorial, action is fast paced, game is witty and super fun and humorous. I'm not an RTS guy too much but this theme scratches my itch.
Killer 7 & Resident Evil 4- these have "superior/enhanced" ports, but to me these games were made to be played on the GC, nuff said.
Mario Kart DD- Yes and will live on through my kids and their kid's kids. Great concept, fun modes, solid levels. My wife is always competitive when we play and we've sprouted enough offspring to have tag teams!
PSO Ep III Card Rev- this is a special game and is so niche it probably shouldn't exist. You got the Phantasy Star Universe setting (obviously), intriguing game concept, well done RPG elements with taste of grid base battles and throw customization via card deck building to improve strategies, so on and so forth this game shits on Baten Kaitos basically. It will take a lot to get used to but once you get the hang of it and invest a couple hours things start to juice up and become addictive, it's deep and unique experience.
Smugglers Run Warzone- Surprisingly super fun and addictive game. Various missions, decent story objectives, excellent controls really just tons of replay value. This version is It's own entry made exclusively for the cube, taking advantage of 4 player modes and I think it remixes a lot of the previous entries, so you get a little bit of everything.
Animal Crossing- although not my personal pick, but my younger sister who doesn't even play video games has just this game and a GameCube for as long as I can remember now. I even bided on this at this years charity auction as a surprise for her only to be surprised myself she still had it. So this should be noted.
I know these are tough to sell versus the staples but, these games I suggest are some primo unique experiences that suit me perfectly.

I'm just playing one mission over and over because of the soundtrack. I know it's all licensed stuff but it's sick.

Yea that is a sick song, blistering hi hats, some acid breaks and kick and clap good VG music!
@dsh- it's a blast your not missing much by passing over the first 2 unless you like Warzones and want more. But Warzones wraps everything into one package, plus the inclusion of 4 player game modes and even the AI is fun solo. The graphics may be a little more sharp and detailed on the ps2 but barely. I would say this is the one to own out of all versions.
