CFFJR, I also dislike Diddy Kong Racing. In fact, I genuinely loathe its controls.

Diddy Kong Racing sucks. I've played the N64 and DS versions and the game isn't good on either platform. Busy work mission design and assed up controls and a floaty physics system aren't saved by decent graphics.

I like Diddy Kong Racing, but the people who think it's better than Mario Kart 64 are deluding themselves.
But not as much as people who think Crash Team Racing is the best kart racer of that generation.

EDIT: Apparently...and despite my attempts at humor...Muppet RaceMania (PS1) is an awesome game. Traveller's Tales' other kart racer, Disney/Pixar's Toy Story Racer, is also apparently awesome. <sigh> I have added them to my "want" list. (Is the PS1's library bottomless?!)

Sonic R is a decent racing game and CTR is the best kart racer of that gen.
