Business lunch at an "Italian" restaurant. Knew things were iffy when I noticed their soup of the day was "Tortilla chicken"...which I like, but not so "Italian". Ordered manicotti, got cannelloni.

I know, "cool story", but it would be nice if the people writing the menu knew wtf they were serving.

Marinara, olive oil, mozzarella, and oregano. Use at least 2 and it's Italian, right?

Made me a grilled cheese sandwich today. Had some white bread, since I haven't used white bread in forever in grilled cheese sandwiches.

When did white bread suck for making grilled cheese? Got a nice toast on the bread, but the cheese was far from melty like I get with a whole wheat bread. Thought it would be good, but man what a huge disappointment.

You must be doing something wrong. White bread is still king for grilled cheese. I just had myself a grilled mac & cheese sandwich last night on some white bread I plucked from the freezer.

I heat the pan thoroughly between a medium and medium high heat before starting, don't over-butter the bread and cook them one at a time so it sits squarely on the burner. I got a nice toast to it, but the cheese was far from melty...guess I should turn the heat down a bit?

Must be too used to making it with whole wheat bread.

Go with the medium heat, and if you can let the cheese come up to room temp first.

edit* Cast Iron skillet, medium heat, 1 tbsp butter, two slices bread, two slices american cheese, in sorta that order. It's too difficult to screw up.

I know! This is why I was completely dumbfounded. It must have been the bread I used, because the inner sides of the bread were not even remotely toasty. I guess I just needed to buy some WonderBread.

Did you have root beer and a pickle on hand nearby when cooking? If both of those items were missing, it might have saved you from a crashing disappointment from the high as you realized halfway through eating.

No pickle, as I don't like the taste, but my wife is a devout follower. I had a tall glass of milk and some tomato soup to go with it though. That helped. Now on to make some barbecued pork steaks, baked sweet potatoes and buttered brussel sprouts!
