I really enjoy lots of minimalistic, subdued, ambient, and "background" music - but Wilco is the kind of thing I find irritatingly dull.

maybe you guys are listening to the wrong Wilco stuff?
The thing that's pretty great about Wilco is the wide variety of the stuff they play/their style - especially from roughly 1994-2004 or so, where each album has a decidedly different sound/vibe/production. So if, for example, you found Summer Teeth to be boring as fuck, you may enjoy the raw, more punk-influenced sound of A.M. or the rockabilly/rootsy-ness of Being There. If you want more blistering, improvy guitar work then there's a lot to like in their early-mid 2000s output. I am happy to point you to some specific songs.
I would also say the same for Radiohead - they are an even better example of a band that, for the key years of their catalog - were regulalrly experimenting and trying new things and so I find it hard to think that somone wouldn't find something they like there.
That said, I think it is fair to say that both Wilco and Radiohead have fallen into a bit of a same-ol-same-ol groove over the past 6 years or so. So if you don't like what they do now, I can understand thinking there's not much reason to get into them - but there is!
That said, I can understand finding this stuff boring, though I do have a soft spot for James Taylor...

Oh, I wasn't comparing. I was just listing off things that bore me.
And I do like a good chunk of Radiohead's first four records, so it's not an overwhelming majority. I've liked what I heard of Uncle Tupelo too. So not all is lost.

EDIT: Listening now. The first couple songs are alright, but it's starting to wear on me a bit. I think what I remember of liking from UT must have been the other dude.
I also forgot to put Gram Parsons in that list of music that bores me.

I never got into Wilco because I'd rather listen to Uncle Tupelo, and even then there's a decent amount of UT that doesn't work for me. If I'm running the alt-country style, there's much better options.

Listened to an entire Phillip Glass symphony this past weekend. Great, great stuff.
Have also been listening to a lot of Wagner.
Off to see/listen to KISS ME KATE in about fifteen minutes. I prefer the symphony over musicals, but Kiss Me Kate is a riot.
