I'm picking up a PS2 today and plan on picking up 6-8 games tonight as well.
Here's what I'm looking for so far, but would like other suggestions.
Klonoa 2 (if I can find it)
Smugglers Run (wife loves this game)
Gran Turismo 4 (love racing sims)
Viewtiful Joe (unless the GCN version is better)
I am really into platformers and action/adventure for the most part, fun and unique games as well. Not really into fighters, shmups, or RPG's though. I also love combat games like Return Fire and Wild Metal.
Any other games I should keep a look out for?

DEFINITELY go with that Klonoa 2 urge. And I'm pretty sure that Viewtiful is only marginally better looking on the Cube; probably hardly noticeable.
You might as well throw Shadow of the Colossus in there while you're at it..

I may try to get the Ico/SotC one-two punch.
I may end up with more than 8 games... lol.. oh well
EDIT: I should also mention that I do like RPG's, just not "turn based" RPG's.

if you like combat games, you've gotta get god of war I and II. theres almost no excuse not to. devil may cry is good too.

God of War is a great action game with platformer elements if you don't mind the copious amounts of blood. There are also some adult themes, so if that's not your cup of tea, GoW may not be the game for you.
Viewtiful Joe is a great choice--I'm currently working my way through it and God of War II.
Burnout 3: Takedown is my all time favorite non-kart racing game, but it is not a sim. It could be a good distraction for you from GT4 though.

Man, where to start! So many great games came out for PS2. Yakuza 1,2, Zone of the Enders 2, Onimusha series, Silent Hill 2,3, Red Star, DMC 3 Gradius V, R-Type Final are just some off the top of my head. I'll look at my collection and update. You just bought the best system ever, congrats.

Twisted Metal for great fun car combat.
When you say you don't want fighters, are you just saying no 1 on 1 versus type? I don't blame you there. All those are good for is to show off pretty graphics, something the PS2 doesn't have. What about action beatemups such as The Warriors and Red Star?

Beatemups are cool with me. I have nothing against 1 v 1 fighters, I just usually don't play them that much. And when I do play them it's usually just to play MKII or MK3 for nostalgic reasons. Also, I suck at fighting games for some reason, my wife kills me at DOA3 all the time and she's hardly ever played. Survival horror?
Fatal Frame 1, 2, 3, Silent Hill 2 and 3, good places to start if you want to begin checking out the SH titles on the console. There's a lot more, but start with some of the highest quality that's also beatable (I'm looking at you, Siren).
Also, have you considered picking up the Metal Slug Anthology on it? I love it, and a lot of folks consider it superior to the Wii version since there's no controller wagging for grenades.
Oh, and Gungrave. And the Way of the Samurai series is good too. And The Punisher.
Face it, there are so many quality titles on the console, you're gonna end up with a ton. Currently I'm sitting at 49 PS2 titles in my collection(mostly fighters and survival horror), and there's still more out there I want to grab.
