I actually referenced your holodeck concept a few months back for a business venture one of my coworkers. He found a police training simulator (http://www.virtra.com/v-range/) that he wanted to setup and I suggested your holodeck for a sideroom of the property. He, and his buddies, were blown away with the VR setup and are currently looking at investing into either the cyberwalk or omni treadmill for a business version of their product.
There is also redirected walking, which works by using an external camera to watch your position in a room. As you approach a wall, you design your product to start slightly shifting the scenery to direct you to walk in circles to avoid running into real-life walls. It only works in hallways (because you need visual cues to know not to walk in a certain direction) but it's something being explored.
