Let's be real here, most JRPGS are not like the 7th Saga, they're pretty easy. They're really no more mindless than hack and slashes like GoW. More so turn based, but strategy rpgs are pretty easy too for the most part, unless the computer is just cheesing. (I find customization to be the primary form of entertainment for Tactic RPGs rather than actual...tactics).

Admittedly though something like Final Fantasy Tactics is pretty easy to cheese once you understand the base concepts and push toward some of the nastier class combinations. Try fielding an army of female monks with the Squire's battle skill(for accumulate), the Ninja's two hands, and the Dancer's +3 move. Such a unit requires little equipment, is highly mobile, has a high attack power, attacks twice, can build up its power, can attack at range, and can heal, revive, and remove status effects. The game becomes blitheringly easy.

But, as has been stated, blanket approaches and statements to genres do not work. Yes, many JRPGs have awful stories and simple mechanics. And then there is 7th Saga, which has a relatively limited story but continuously presents a difficult challenge in its brutal random encounters. And while strategy/tactics RPGs may often have ways to cheese them, games like Fire Emblem and Ogre Battle/Tactics Ogre show that there is still a lot of factors which can make them difficult, almost brutally so at times. And even though you can cheese Ogre Battle, it's still just as easy to screw it all up.

That said, I also like mindless gameplay and enjoy Dynasty Warriors.

I own Sonic games just because I think I should own them, but I dislike playing them. Never have been able to enjoy Sonic.
