The only thing I can think of is either the PS2 artificially smooths the component output and not the S-video output, or the settings on your TV for the component input are different than the S-video input.

My experience is that PS2 / Component is better than PS3 / Component played on same WEGA CRT.
I played R-Type Delta both ways. (Good test since R-Type is bascially replaying levels over and over again.)
PS3, while looking great, nevertheless had noticeable blur in effects like explosions on Level 1 and WaterFall early on Level 2.
PS2 was clean and accurate. No blur.
As far as I could tell, the gameplay was equivalent (didn't feel any lag either way) and honestly, the visual differences were not enough to impact the game.
It's just that the the PS2 seems to output very clean PS1 games, which makes sense since my understanding is that the initial PS2 had PS1 hardware built in, with the added advantage of being able to output in component if you chose to do so.
Highly recommend that route.
