Nothing meaningful design wise from Sunshine carried over to later Mario installments in my opinion. I don't hate the game, I just think it was a bit of an evolutionary dead-end.
Mario Galaxy was basically a whole game of the obstacle courses from Sunshine
Bit of a back-handed compliment that. Sunshine's greatest contribution came through the parts of the game that didn't use the central mechanic and that most resembled Mario 64? Not exactly ringing praise.

I still hate those cock-nosed eggplant abominations either way.

Controversial Opinion!: Prince of Persia: Sands of Time was the best and most influential platformer of that generation.

This is a good point, and I don't think that I can argue with it.

I think the only core Nintendo franchise that actually improved in the transition from the N64 to the Gamecube was Smash Bros. Mario, Zelda, Wave Race and F-Zero were all worse IMO. Mario Kart and Starfox were much, much worse. And some never made it like Pilotwings. In its defence the GC got a fantastic Metroid game and Rogue Leader.
F-Zero GX is honestly the only F-Zero that I can say I actually love. The others are alright, but to me the series has always been dreadfully bland outside of GX.

As for the SNES to N64... ugh... Starfox was better I guess?

I think that's pretty much spot-on actually.

Whoaaa slow the hate boat down there. Wave Race Blue Storm was generally well-liked. Mario Kart Double Dash is amazingly good. F-Zero GX looks great. I'll agree I wasn't too impressed with the GC's Starfox offerings. I'll also agree with how good Rogue Leader is.

Have you played the F-Zero games on the GBA? I'm looking very forward to Together Retro in September where we are going to be going through the entire series.

I played the two that came out here. The first was sort of just a remake of the SNES game and the second was a little better but it still didn't really grab me.

I'm told the one we didn't get is the best but I haven't played it.

The 2nd one on GBA (GP Legend) has this track, which I adore:

It's more of a disappointment boat really.

F-Zero GX I like a lot. It's the best future racer of that gen for my money. It is a fantastic game that me and my friends used to have a lot of fun with. It looks amazing and plays great. I just don't love it like I do F-Zero or F-Zero X though. It lacks the gamefeel (probably because Sega made it) of F-Zero and is no way near as fast as X (unless you cheat). But yeah, worse here is a super fine line.

Wave Race: Blue Storm kind of has touchy controls and wasn't really well received at the time. Again, not awful but also not an improvement over its N64 iteration. If there's one game that should have been improved by the move to Gamecube, it was Wave Race.

I massively dislike Mario Kart:Double Dash though. It's one where I genuinely don't understand how people can prefer it over any other Mario Kart. It's not even as good as PS1 era stuff like Speed Freaks/Punks. I think it's slow, it also has slightly loose controls, the tracks are beyond awful and have little challenge, the music is terrible and the gimmick of having two guys in the kart is kind of pointless (another GC innovation that was never seen again). It's been a while since I played but I'm reasonably sure it was somehow more of a cheat than Super Mario Kart and Mario Kart 64.

I guess people prefer it as a party game than a straight racer? For me though it was so disappointing after the long wait between it and Mario Kart 64.

I could see someone feeling that way if they prefer Super Mario Kart style over full 3D tracks with hills and junk like 64 and on.
