I'd reccomend Soul Bubbles, it's a really great looking 2d puzzle adventure game with great style and really unique gameplay. Here's a great thread on neogaf that details the game;

My favorite is still Yoshi Touch and Go. For some reason I never grow tired of it.

The Etrian Odyssey games by Atlus make excellent use of the stylus. They're old-school dungeon crawlers where you draw your own maps as you explore.

Metroid Prime Hunters - 2nd most intuitive fps control system ever below mouse and keyboard! Pity about the 'Metroid Claw' syndrome!

I thought that's what I got after too much searching for Samus on rule 34.

I can't even play it on other platforms. Between tossing blocks using the touchscreen and the dual screen display its just not the same on any other platform.

There are quite a lot. The titles I have played that use the DS' features to the max are:

Elite Beat Agents/Osu! Tatakae! Ouendan
The World Ends With You/It's a Wonderful World
WarioWare: Touched
Star Fox: Command
Metroid Prime: Hunters

And at number one on my list is definetly The Legend of Zelda Phantom Hourglass. This game is played almost entirely with the stylus (except navigating menus and equiping item). The best part is it's all done so well. The combat does take a little while ot get used to but after that it feels just like any other Zelda (in a good way). The other special features the DS has to offer are used too. Blowing in the mic will clean off sea charts and light torches. There was even a point where you had to close and open your Ds to trigger an event. That to me is when you know the developer used every hardware feature offered.

Not to say that games that don't use all of the Ds' features aren't good too. I have a blast with games like Metal Slug 7 and Castlevania as much as I do with games like Elite Beat Agents and WarioWare Touched.

Elite Beat Agents and Ouendan 1+2.

Seriously, if you own a DS and have not played these yet, play them right now (this goes to ALL of you, because I want an EBA2). They make great use of the touch screen and are extremely addictive. I've yet to find someone who didn't like them.

Also Kirby Canvas Curse. It's a bit easy but it has really good touch screen use.

Jump Ultimate Stars utilizes every button and the entire touch screen. When you actually use the select button, you know the game utilizes a lot.
