My limit for spicy foods is probably a Zinger burger from KFC - anything more spicey than that, then i'm out. I just don't enjoy eating really spicey foods - I mean, I could if I wanted to, but i'd rather eat food that doesn't make my mouth burn, doesn't make my eyes water and doesn't require me to down a gallon of water afterwards. I often use a variety of spices when i'm cooking, but I prefer they spicey-ness to compliment the taste of what i'm cooking, not totally and utterly overwhelm it.

I was in mexico with my cousin, and we were at a burrito place (What else do you eat when in mexico?)
They brought out an assortment of spices to add to the mixture of already spicy toppings. I made my run through 2 of the 3 add-ons. Pretty damn spicy. Then their was the 3rd, some kind of green goop. I cant remember what they called it...reminded me of guacamole, but it wasn't. What they did say about it in plain english was, "white people shouldnt try it." So i took a generous spoonful and lathered it on my burrito.
Oh how those tears and snot came out of me. I wasnt about to let the mexicans get the best of me. so i finished it off with a smile on my face and a pile of tissues at my side.

I love me some spices, doesn't mean I love me some hot.

I've been asked if I like spicy food before having dinner and I've made the mistake of saying, "Oh yes, of course!" Then getting there and all they meant is they loaded it up with hot sauce and jalapenos. That isn't spicy in my book, that's just hot.

It isn't like it burns me, it just lacks flavour now. I've eaten some of the hottest Thai and Indian curry dishes with out a sweat in the local restaurants around here. But spices in my opinion should enhance flavour, not mask blandness by burning all the taste buds off your tongue. So I like a nice mixture of spices, not just the hot ones (all spices aren't hot you know, and spicy doesn't necessarily mean hot either).

Another section of my taste is I prefer fresh spices as well. My brother and I tend to buy them fresh or pick them fresh. We can turn any frozen pizza into gourmet!

I'm also from Louisiana.

In my late teens/early 20's, I worked in the kitchen at a Cajun restaurant. We had a waiter who would order extra spicy employee meals. He was a 6'5, 350 lb gargantuan... a real monster of a man. In the past I have seen him consume upwards of 10-12 strong Long Island Iced Teas and shrug it off like it was friggin' Boone's.

Well, he would ask me to slice pockets into the sides of the chicken breast, and stuff it with cayenne pepper. Afterward, the chicken would basically be battered in cayenne prepper and fried, not a spec of meat showing at all through the red.

I can't imagine the kind of effects something like that would have on a normal sized man.

Being a connoisseur of BBQ, I find myself making rubs and they almost always have a healthy dose of Cayenne.

I like spice, but I can only like the "blow your mouth off" hot stuff sparingly. I've hit 350K Scoville's on wings without blinking, but as far as everyday foods go I keep it only mildly spicy.

No matter, I have to have some form of heat in anything I cook, chili, brisket, boston butts, sauces, ribs, etc....

I like to call my BBQ the best of KC/Texas/Cajun all rolled into one. A little sweet, a little peppery, and a bit of heat... mmmm..... :D

Spicy food is the best. I can;t believe it when people choose the mild form of something spicy. It's like an oxymoron.
