It's a bit more old school with the interface than the games you've mentioned playing but it certainly fits into the choose your own story classification that you're looking for. Every (Or almost every) conversation you have in the game let's you build the world/plot/characters in different ways.
A good example is that within the first couple minutes of the game someone compliments your dog and asks what it's name is. You're given several options, like "Her name is Blue" or "His name is Homer" and depending on what you pick it becomes true. I'm not sure how much control you have over the overall plot as I've only played act 1 so far and only the first 3 acts are out. But nonetheless it's really intriguing being able to develop the games world as you play in such an elegant way.

The best visual novel / adventure games I've played in the past 10 years were made by CiNG.

Hotel Dusk: Room 215 is a masterpiece, an absolutely phenomenal experience. Its sequel Last Window: The Secret of Cape West is nearly as good. Best noir style detective adventure games I've ever played with amazing characterization and fabulous jazzy OSTs. Two of the most mature games I've ever played too, and I don't mean that in a nudity and gore kind of way either.
Then you have their game Trace Memory (AKA Another Code: Two Memories) and its sequel Another Code: R – A Journey into Lost Memories. Both of those are great adventure games with a young female lead that involve ghosts and science fiction. Not as adult oriented as the Kyle Hyde games above, but still well worth one's time.
Then you have Again, a game that has some budget compromises but enough of that CiNG DNA to keep things good. If you enjoyed X-Files and Twin Peaks, I would strongly recommend Again. Just don't expect it to meet the fidelity standards of CiNG's other works.
The only adventure game by CiNG that I haven't played yet is this:

They created it for Capcom on the PS2, but it didn't come to the USA. Supposedly the PAL version is not only in English but also has a 50/60 selector, so I've got to look into it sometime.
But yeah man, CiNG is where it's at if you ask me. If you don't have a DS or Wii, there's always emulation. Considering CiNG is no longer in business (woe of woes) I wouldn't feel too bad about it nowadays.

Someone already said this but I highly highly recommend the wolf among us. Only three out of the five episodes have been released so far. But the game and story is fantastic. So far i enjoy it much more than walking dead season 1 and what's been released of season 2 so far.

^ I played the 1st episode and it's really good but better than TWD: S1 is a little far fetched. P.S I'm kind of a fanboy of the series.
