I've been listening to a lot of OCRemix stuff, specifically their FFVI, DKC2, and Pokemon albums). Man, that's an awesome site for remixed VGM.

Cannot recommend OCR highly enough, their albums are all amazing.
I also have recently become smitten with Smooth McGroove and have made a playlist of my favorites from his many acapella covers.
Another cover/remix artist I enjoy is Lennart Alsing, who I also made a playlist for that includes all of my favorite DKC tracks he's covered.
And if you're into rap remixes, check out Team Teamwork and 2-Mello, both of whom have some incredible mash ups.
And aside from all of that, I somehow find time to listen to some of my favorite original soundtracks to games like Bastion, Castle Crashers, Deux Ex: Human Revolution, Assassin's Creed 2, Dustforce, several Final Fantasies, Chrono Trigger, FTL, Hotline Miami, Machinarium, Super Meatboy, Super Mario RPG, and almost all of Blizzard's games.
